Asian-inspired restaurant Noko will open in East Nashville next week. At the forefront of the business model is its employee betterment program which includes four-day work weeks and travel stipends. “For years we have talked about sustainability of our farms; we talked about sustainability of our food, and all of those are extremely important. Those are things that we want to embody,” said owner and founder Jon Murray. “Somewhere along the way, I feel like we forgot to talk about the sustainability of ourselves.”
